Triaged to Confirmed. The only thing that I noticed in the log files was that GRUB was already installed and thus not reinstalled. I wonder if there was an older version of GRUB installed and ubiquity relied on it to finish the installation and it failed because of an incompatibility. I'm marking this as Confirmed, because it could be a serious bug or lack of GRUB version check before proceeding.
