I've installed bittornado, and removed it, when removed, the shortcuts on the menu are remaining

This could be a packaging problem.

Have you also removed the bittornado-gui package?
Please check if you have a copy of these files too:

Yes I also assume it is a packaging problem...

Strange, if there is no /usr/share/applications/bittornado.desktop file than there shouldn't be a menu entry.
Do you have a bittornado.desktop file anywhere in your filesystem?

If you have Gnome you can also check with System->Preferences->Main Menu to which icon file the menu entry is pointing.

PS. I have installed and uninstalled bittornado without any hiccups.
