this will only happen, when CUPS is compiled from source and multiple language drivers ( 1 per language selected per printer included ) are generated. They all show up as "standard" through the gnome-cups-manager, while CUPS via localhost:631 shows them with language indices.
Apart from that, Dapper offers me only the EN version, although I have set the language to DE right from the start.
The printer I experience this with is a Canon PIXMA iP4000
