Ok, I did some tests, I modified both upstart jobs /etc/init/cryptdisks-* to record a full shell trace to a log file, then rebooted.
As usual I didn't get any kind of prompt from plymouth but assumed that it was waiting for the key anyway and so entered it.
Looking at the -udev trace, we can see that the passphrase was actually accepted (although I didn't get any kind of feedback from plymouth).
I'm also attaching my fstab, crypttab and /etc/default/cryptdisks.
