gnome-shell logging is too brief to be useful

Bug Description

gnome-shell appears to only log a couple of relevant lines at most on start-up (`journalctl /usr/bin/gnome-shell`):

Not enough information to be useful for debugging peoples' GPU and monitor start-up issues.

One of the most important things we miss is the JS backtrace.

It will be soon possible to enable it by adding
  SHELL_DEBUG=backtrace-segfaults

And even better by appending also ":backtrace-warnings", which will allow us to get some more infos.

I suggest to enable this in 17.10, and in 18.04 (till beta, at least) to get better logging in case of crash events.

Related to this is also bug #1722886, as it's quite needed to include such informations we would collect in automatic reports.

I'm not sure Gnome bug 789237 alone is sufficient here.

A proper solution should log GPU and monitor details _always_ on startup, to allow easier diagnosis of start-up bugs. Both Xorg and Mir do this already...

Actually we do have some kernel driver info logged on mutter startup now, so let's say that's enough.
