Binary package hint: ubiquity
I selected 'French' during the installation, all the installation occured in french but after reboot, all the UI is in English excepted the Clock/Calendar applet.
The french language packs have been installed during the initial setup.

Did you have Internet connection during the installation? Did you choose first English on the Live CD and then French when installing?
