Thank you for taking the time to report this bug and helping to make Ubuntu better.
I have spent some time trying to reproduce your issue - however the only way I could replicate this in any way was to remove the postfix configuration directory (/etc/postfix) prior to trying to purge postfix and mail-stack- delivery.
Re-running 'sudo apt-get purge mail-stack- delivery' successfully completed the purge operation in my test case as 'postconf' was no longer installed so mail-stack-delivery won't try to backout its changes to postfix.
Please could you check whether this was the case in your installation.
