I think I found a solution (or at least one other thing to fix). I ran the command:

sudo chmod +s /usr/lib/cups/backend/cups-pdf

and it started working for me. There's been plenty of other "chmod" commands listed above for this file, but none that did a "set user ID". So just add it to the list of things that may or may not work for you.
