My problem was due to a previous Windows installation which was done in Legacy mode. Thus, installing ubuntu in legacy mode solved the issue. This is not a bug rather a fail on my side because I did not realised the Windows installation had created a NTFS recovery partition instead of an EFI one. My bad. Closing the issue as for now.
