On my lucid system with nVidia 8800GT
Adding:
GRUB_GFXMODE=1920x1200
GRUB_GFXPAYLOAD_LINUX=1920x1200
to /etc/default/grub
and
FRAMEBUFFER=y
to /etc/initramfs-tools/conf.d/splash
seems to work.
Grub is visible, plymouth is visible during boot (I haven't checked shutdown, yet), and text consoles are visible.
