The date format (at least for me) is pulled from the system locale. For example:

$ LC_TIME="en_US.UTF-8" ./thunderbird

Displays dates in this format (US English):
11/09/2009 12:44 AM

and
$ LC_TIME="en_GB.UTF-8" ./thunderbird

Displays dates in this format (Great Britain English):
09/11/09 00:44
