Unclear <user> as variable in Swift install/config instructions

For http://docs.openstack.org/trunk/openstack-compute/install/apt/content/installing-and-configuring-the-proxy-node.html the .conf file contains user = <user> meaning fill in with the user you're running swift as, but this isn't marked up very clearly. And since most of the .conf files contain real values in the walkthrough, include a sample file with a real user name filled in.

other sample configuration files. Setting user to 'demo'.
