According to your DpkgTerminalLog.txt you removed grub on 2010-08-10 18:13:42 and grub-pc on 2010-08-10 18:23:47. Having both of these removed means that you do not have update-grub available and that is why the kenrel post-inst script failed.

Also, more recent versions of grub and grub-pc have changed the way they handle getting update-grub to be called (no longer using the postinst_hook mechanism in /etc/kernel-img.conf) so that this failure mode won't happen.
