Bug Description
OpenOffice 2.1 should be backported to Edgy. The key reason is that OpenOffice 2.1 fixes the font display issues OpenOffice 2.04 has on Edgy.
Note - OpenOffice 2.1 debs that are available on the internet do work on Edgy, so someone's already done much of the work porting OpenOffice 2.1 to Debian. (Though when I installed them, the Word Processor's Applications/Office menu entry was missing, so some packaging work is apparently still needed for Ubuntu.)

I was mistaken - the Applications/Office menu items install perfectly using the .deb files for OpenOffice 2.1. I had simply been too hasty before, and failed to look at the menus after I restarted my session.
I tried doing the installation again (going back to a ghosted image of Edgy w/ OpenOffice 2.04, using Synaptic to uninstall all OpenOffice 2.04 packages, and then "sudo dpkg -i *.deb" from the directory with the deb files), and this time, after I logged out and back in again, the Office menus are all correct, because one of the deb files is openoffice. org-debian- menus_2. 1.6_all. deb, which installs the correct menu items.
When you uninstall OpenOffice 2.04, you also uninstall ubuntu-desktop. I have read that this will prevent an upgrade to Feisty. That is a price I am willing to pay to fix the font problems in OOo 2.04 in Edgy - I only do clean installs anyway.
Here's where I got the installation files (US English, I'm not sure about other versions):
